So my gf bought me a VG10 61HRC kitchen knife set. 1 of the knives had a slight bend at the side of the handle. We just got confirmation that a new one is being shipped, and we can keep the current one. So I wanted to see about fixing this one. How would I go about doing this without causing any/too much visible damage?

There’s only one way. Bend it back. You will probably find it easy considering the thickness. I’d recommend wrapping the edge in a thick piece of leather like a belt and gently bending it from the bent corner back. You’ll have to overextend it slightly to get it back to straight. Maybe 5-25° depending on the temper. That steel on the heel will always be softer and more prone to deformation in the future but you can make it usable again.

I would use my fingers personally. You could add gloves, or you could try to be gentle with some pliers or something. You don’t want to go hard on hard for a change. Like you wouldn’t want to use a pair of pliers wrench to just smash it directly flat again. Your chance of breakage would be high.
