I would recommend avoiding the use of a polish unless you want to minimize the contrast of the Damascus.
If you’re going to use a polish anyway, be sure to test it on a hidden section of the tang first.

Isopropyl strips away ANY protection the blade had and makes it immediately more prone to rust(oxidation). I don’t recommend using it on a blade. For small spots a polishing cloth(no compounds needed) followed by a light lubing is usually best.
Vaugith
I have no issues using iso for cleaning a blade, especially when there’s some gunk or stuff on it that’s difficult to get off. It sure does strip off any protective oils though so I always oil immediately afterwards. Mineral oil is fine. There’s other stuff you can use that’s stronger, not food safe, but I wouldn’t worry about that unless the mineral oil doesn’t work out.
Flitz is a good polish. You might also try just rubbing the rust spots away with an oiled rag/paper towel first. Too much use of a metal polish can remove the contrast between the different layers of steel in your Damascus. A little won’t hurt though.
