I bought the M9 as shown and I noticed this warning. Then I realized I see this on damn near everything I see. Whats with it? I get yk living causes cancer but why mark almost everything.

Also heavily asking about the wash hands after handling. What does handling mean and do I actually even need to? Does handling a knife just mean grabbing it?

Prop65 basically says that if a product is made of or with any quantity of any material that might in part cause cancer if mishandled (so plastic stuff because you might burn it and breath in the fumes, anything brass because brass contains lead, etc), it needs to be labelled as such. Instead of making sure production lines are 100% free of such things (practically speaking that’s nearly impossible, either because it’s a vital component of the product or it’s just hideously expensive to have a production line that clean), companies just slap a prop65 warning on everything they make. Pretty much the same idea as the “made in a facility that also processes nuts” warning, but for cancer.

To be fair, it came from a place of good intentions but ended up so far-reaching that it’s mostly a joke at this point.

Because Companies get sued for the stupidest Shit imaginable in the US. If they slap a Warning Label on their Products, somebody hurts themself and tries to sue them they can turn around and point to the Warning Label in Court.
